I know some people don't like them, and no, they are certainly not gourmet. But this pierogy casserole is not your run-of-the-mill, cream-of-something-soup-and-noodles casserole. Which is why, even though it's stolen/adapted from my friend Elizabeth's blog, I am posting it here too. I make it probably twice a month.
pierogy casserole
1 box pierogies
1 jar marinara sauce
1 green bell pepper
1 onion
2-3 chicken breasts, cooked and chopped
1-2 cups of Cheddar cheese
1) Chop your pepper and onion:
2) Layer your casserole: Pierogies first, then vegetables, then chicken, then sauce. Sprinkle cheese on top.
3) Bake at 350 for 30 minutes.
4) Enjoy!

I've only had pierogis once. We really enjoyed them, but I always forget about them! What a clever way to use them.
